On 2 August 2017 we picked our Pinot Noir and Chardonnay, determined for the first time to make a Classic Method sparkling wine. First the Pinot, 70% of that vintage, from the Vignazzo vineyard, which has been catching the sun for forty years on the hillside just behind the winery, at 280 metres.
On the other side of the hill, a little lower down at 230 metres in the Berganzina vineyard, the Chardonnay: twenty-five years of vines, 30% of that vintage. The wine then ages on the lees for 48 months, with the cuvée yield limited to 48%: very little must, only the finest.
