The grapes, from vineyards averaging twenty-five years of age, are hand picked and destemmed. Maceration on the skins lasts around 15/20 days; in the first months the wine matures in concrete vats, encouraging malolactic fermentation.
In the first quarter of the year after the harvest, the wine is moved to steel tanks for its temperature-controlled second fermentation, keeping the aromas fresh and fruity. In spring, once the second fermentation is complete, the wine is bottled.
